Success is savored at rib competition

University Housing Residential Dining Services held its second annual “Hot Off the Grill BBQ Rib Competition,” and the winners were … just about anybody who tasted the zesty entries.

Five teams from residential dining halls dished out their best rib and side recipes Friday at the Marketplace in Hill Dining Center. While the gourmet ribs were grilled outside on the Marketplace patio, one could smell the competition from North University Street. Students eagerly lined up inside the Marketplace for the chance to try each of the entries and vote for their favorite. A panel of three volunteer judges also sampled each of the recipes to render their decision for the best rib.

When the smoke had cleared, the Judges Selection went to Joyua Williams and Ronda Jones from Bursley dining hall for “Sweet ’n’ Spicy Rub with Sweet ’n’ Spicy Loaded Baked Beans.” Students and guest diners voted the Crowd Favorite award to James Bargo and Amanda Groves from Hill Dining Center for their “Bourbon Street Ribs with Mardi Gras Party Slaw.”

Other contestants included: Keyshia Brown and Byron Miller, Hill Dining Center; Riki Ballard and Erica Woods, West Quad; and Janice Williams and Kris McDonough, Lawyers Club. Panelists were Leon Howard III, hall director at East Quad; David Briganti, chef lead at Markley dining hall, and Caitlin Snow, student.
